that's correct - it should only be shipped to the address provided with the payment, otherwise the already pretty limited seller protection will be void
I would cancel the purchase with the reason "problem with address" (or something like that)

since Hermes does not deliver to Packstations / DHL / Deutsche Post branches, I would write this to the buyer again and, if he does not respond, cancel the purchase. Unfortunately, there are often customers who do not know who delivers where.
Reason: Problem with the customer's delivery address
After that, you can list the item again and let the customer know that he can buy the item again with a different delivery address.
