Hello, when I want to communicate with the buyer of my item, I always get the message:

"Your message apparently contains contact or payment information, which is not permitted under our policy on communication between eBay members."

But this isn’t about contact or payment information at all, it’s about the shipping terms.

The AI assistant doesn’t have a clue, it doesn’t get anything at all.

Does anyone know whether you can also reach eBay by phone and speak to a real person?

The shipping terms are usually specified before the item is listed so that interested buyers can see how and what. Then you don’t need to write back and forth with the buyer much anymore, but just ship exactly as stated.

That’s what the shipping details are for.

And for your last sold item, no shipping is specified at all, only pickup! And you should stick to that; anything else only causes problems and you lose your seller protection!
